I ‘m always on the lookout for a new project but taking care of our health should be ongoing. I try to eat healthy 85% of the time BUT, I live in South Louisiana and we have great food here. So I do treat myself to some delicious be it unhealthy treats from time to time.
On a recent day trip to Breaux Bridge, my sister and I stopped to have lunch at Buck & Johnny’s. I had a sweet potato and sausage soup that was out of this world. I found myself craving it when I got home. So this is my version of the soup. Hope you enjoy!
First I brown onions and kale in a stick of butter. One whole onion and about 3/4 of a head of kale. Make sure to remove the leaves from the stalk.
At that time I am also boiling 4 sweet potatoes until they are soft.
When the onions and kale are cooked down, I add a container of Vegetable broth.
Peel the sweet potatoes and add to the pot.
You can smash the potatoes with a potato masher or use an immersion blender.
After mashing potatoes to make them creamy add boiled turkey sausage.
I try not to use a lot of salt so I season with Bragg’s Nutritional Yeast and some garlic powder.
